I always thought making cheese was really complicated… and I guess, well yes it is, how I had it in my mind…

My idea of cheese making was perhaps a little more romanticised than it should be… cows grazing peacefully in the back paddock, me wearing my Heidi kit-out and milking my cow in the early hours of the morning and then into my cheeserie to produce feta, camembert, brie, mozzarella, amongst the many other dairy delights, to fill my cornacopious larder…

Considering I live on a suburban block, wouldn’t be seen dead in a Heidi-kit out, sleep late and am bordering on lactose intolerant, this idea is not only romantised, but entirely preposterous.

That, however, does not mean that I do not LOVE cheese… I do, it just doesn’t love me back quite as much.

Moreover, I love feta, so when the opportunity arose to make my own feta, I thought I would give it a crack.

I was gifted a Mad Millie Fresh Cheese Making Kit and Probiotic Yoghurt Making Kit and was blown away by how easy it actually is.  What ensued was a refrigerator full of feta, yoghurt, ricotta and cream cheese… pftt… borderline lactose intolerant? Oh well, bring it on…

I won’t fill the page with long descriptions… just have a look at the video and instruction booklet, and decide for yourself, but one morning in the kitchen, left me well rewarded. I could also anticipate that this notion of making cheese could be indeed quite addictive…

The interesting thing for me was the difference in taste.  I was thinking that because it was all so easy, that somehow the quality of the cheese was going to be affected, but it was the opposite.  While I am possibly a little bias… one morning in the kitchen hardly constitutes for a cheese artisan, and I won’t be plying my wares any time soon… it was seriously good cheese. In fact the feta was incredibly tasty and creamy, a stark contrast from some supermarket brand tasteless cardboard emulations, and bonus, didn’t play havoc with my tummy in the way that most cheeses normally do… having said this, that was possibly not the case after having finished the first block entirely by myself… hard to stop once you start.

Sensibly I marinated the second block, which provided a little longevity to my cheese stash, and thus, allowed it to become even more exceptional.
